ArtistMum: Farmers Market and Scallops!

I always get excited to take a trip out to Brooklyn. Why? Because two of my children live there AND because I usually get a chance to go to the Farmers Market on Grand Army Plaza! And I almost forgot to mention the great bagel place we usually go to where I always get the same thing…..a whole wheat bagel with everything on it ( meaning seeds of all sorts) with cream cheese and lox… all time favorite, loaded with a gazillion calories but soooooo worth the taste!

The last time we were in Brooklyn, we strolled through Prospect Park with our bagels in hand and enjoyed a superlative day. We discovered a little waterfall…..a gem of a find in a busy city! And we watched a baseball game! And then we strolled to the Farmers Market and bought some swordfish and scallops! The fish is so fresh, we hardly ever pass up the opportunity to get some when we visit

So, you guessed it! I had to make my favorite scallop recipe! Scallops can get over cooked pretty easily so I found that the best way to cook them is to wrap them in bacon! And they are so good this way!

I rinse the scallops off in cold water, then pat them dry with paper towels. Then I wrap each scallop in a piece of bacon that has been sliced in half. Secure the bacon with a toothpick soaked in water. Sprinkle a little salt and pepper over the scallops.
Line the bacon wrapped scallops on a foil lined tray and place under pre-heated broiler for about 8-10 minutes, until the scallops are opaque. It’s best to use a pair of tongs to turn them gently throughout the broiling time so that the bacon gets crisp on all sides. Remove from broiler and serve with whatever side you desire! I made some quinoa and brown rice to have with mine. Yum!
